Sourdough Pumpkin Bread

Ingredients
  

  • 500 g (4 cups) bread flour
  • 150 g (2/3 cup) pumpkin puree
  • 90 g (1/3 cup plus 1 Tbsp) whole milk, lukewarm
  • 125 g (generous 1/2 cup) active sourdough starter
  • 60 g (1/4 cup) unsalted butter, softened
  • 60 g (1/4 cup) brown sugar
  • 1 large egg
  • 9 g (about 1.5 tsp) fine sea salt
  • 2 tsp pumpkin pie spice

Method
 

  1. Whisk the pumpkin puree, milk, and active starter together until the starter is mostly dissolved.
  2. Mix in the flour, brown sugar, salt, and pumpkin pie spice until a shaggy dough forms, then rest 20-30 minutes.
  3. Add the softened butter and egg, then knead 8-10 minutes until smooth and elastic.
  4. Bulk ferment 3-4 hours at room temperature, with 2-3 stretch and folds in the first 2 hours.
  5. Shape into a loaf and place seam-side down in a greased 9x5-inch loaf pan.
  6. Cover and refrigerate overnight, 8-12 hours.
  7. Let proof at room temperature 1-2 hours until puffed and domed above the pan.
  8. Bake at 350°F (175°C) for 45-55 minutes, tenting with foil at 25 minutes, until it reads 195-200°F internally.
  9. Cool in the pan 15 minutes, then turn out and cool completely on a wire rack before slicing.

Notes

Pumpkin puree brands vary quite a bit in moisture. If your dough feels noticeably wetter or stiffer than expected, that's the puree, not a mistake in your measuring - adjust with wet hands rather than extra flour.
